Berry Jam Pop Tarts

Ingredients:
3 cups flour
1 1/2 tbsp sugar
1 tsp salt
1 1/2 cups butter
1 1/2 eggs **
3 tbsp milk
Jam filling:
1 1/2 cups jam
2 tbsp corn starch
2 tbsp water.
In a saucepan heat the jam, cornstarch, and water and boil for around 2 minutes.
Mix the flour, sugar, and salt together. Work the butter in with your hands until well mixed in. In a separate bowl mix the milk and eggs and then add to the butter and flour mixture. Knead the dough just until its all mixed together and make two balls. Refrigerate for a few hours until firm enough to roll out. Add extra flour if its too sticky. Roll each dough ball out and cut into rectangles. Place a spoonful of filling on each rectangle and put another rectangle on top). Use a fork to press down the edges and poke a few holes on the top. Bake at 350F on a pan with baking paper for around 20 minutes or until they are a light golden brown.
** you can do half an egg easily by just cracking it into a bowl, whisking it up, and measuring out half of it which will come to around 2 tbsp
