Trail Mix Cookies

These cookies are chunky, wholesome, and delicious. You can pretty much just throw in whatever nuts, seeds, dried fruit or chocolate you have lying around.  There are a lot of other really good looking recipes on this blog which I'm going to give a go in the near future.








Trail Mix Cookies

Ingredients:
1 c. oat flour ( I made my own- just blend 1 cup of oats until they're like flour)
1/2 c. almonds
1/2 c. walnuts
2 tbsp. flax meal
1/2 tsp. baking soda
a pinch of salt
a pinch of cinnamon
1/4c. maple syrup
3 tbsp melted peanut butter
1 tbsp milk

Additional add ins: ( that's what I used but you could put whatever you want in)
- 1/4 c.  walnuts
- 1/4 c. almonds
- 1/4 c. peanuts
- 1/4 c. dates
- 1/4 c. dark chocolate chunks

Put all the dry ingredients in a food processor for a few seconds until it's like flour.  In a separate bowl mix together the maple syrup, peanut butter and milk. Combine the 2 mixtures together and stir in whatever add ins you would like ( This mixture will be kind of crumbly but that's OK) Make 2 tbsp. sized balls and pack them tightly. Baked on a pan with baking paper for 10-12 minutes at 350 degrees Fahrenheit.
