Black Bean Guacamole
recipe from: Oh She Glows
Ingredients:
- The flesh from 2 avocados
- 1/2 c. diced red onion
- 1 small seeded and diced tomato
- 1 ( 15 ounce) can of black beans, drained and rinsed
- 1/4 c. chopped cilantro ( optional)
- 2 tbsp lime juice
- salt & pepper, to taste
Mash the avocados and add the lime juice, salt, and pepper. Fold in the onion, tomato, black beans, and cilantro. Eat with a spoon! ( just kidding)
