Date caramel

 This stuff is amazing. This idea has been floating around the internet for a while now and it's completely natural, has no refined sugar, and tastes like caramel!!! You can put in on your granola, dip your apples in it, or eat it with a spoon ( which I would highly recommend).



 Date Caramel:
 Idea from Detoxinista.

 2 c. pitted dates
a pinch of salt to taste
1 c. milk

Soak the dates in water for 1-3 hours or until soft enough for your food processor. (If yours can handle them the way they are, then no need to soak.) Drain out the water that they soaked in and put just the dates, the salt, the milk, and the lemon juice in a food processor. Blend until smooth. In a saucepan over medium heat, bring to a simmer and cook for 5-10 minutes. Let it cool before serving.

Homemade walnut butter


  I've been wanting to give homemade nut butter a go for a while and today I finally got around to it because it was a professional development day for teachers so we got the day off. This is delicious, healthy, easy to make, and has a nice cinnamon flavor to it.


Put your walnuts into a food processor and blend. First they'll become crumbs.

After a few minutes the crumbs will begin to stick to each other and it will start to look more buttery.


After 4-5 minutes of blending it will start to look like hummus. Add the honey and cinnamon and then just keeping blending it until its as smooth as you want it. I stopped here because I didn't want to fry my food processor but it'll just get creamier the longer you go at it.

Walnut Butter
makes 1 cup of nut butter

Ingredients:
1/2 tsp cinnamon
1 tsp honey ( add more if you like)
2 cups of walnuts

Blend it all in a food processor until it reaches your desired consistency .
